Uranium deposits are the most valuable resources found readily in Carlton and Pine County, and offer these counties the opportunity to create jobs, reduce property taxes, and lower utility costs. Why aren't they being mined? For the most part, most people are simply misinformed.

Minnesota is 21st in the U.S. in nuclear energy production, creating many direct and indirect jobs from the industry, while contributing positively to electricity costs. Is it wise to sit on these invaluable resources at time that our state debt and unemployment rates stay high? Likewise, the Carlton and Pine County region offers few opportunities for long-term, good wage careers as those offered in this industry. There are few good jobs outside of prisons and hospitals in the region.

 TJ's Country Market Recipes Minimize

Venison Recipes

Fiesta Meatloaf
Yield:  89 servings

2 lbs. TJ's ground beef            1 green pepper, chopped
1 pkg. Stove Top chicken       1 onion, chopped
   flavored stuffing mix             2 t. chili powder
1 cup water                            1/2 cup salsa, divided
2 eggs, slightly beaten             3/4 cup Mexican shredded cheese

Preheat oven to 375 degrees.  Mix all ingredients except 1/4 cup salsa and cheese. Place in loaf pan, top with remaining salsa.  Bake 1 hour.  Sprinkle cheese evenly over top of loaf.  Continue baking 5 minutes or until cheese is melted.  Let stand 5 minutes before cutting.  Get all of the ingredients at TJ's Country Market Store in Mahtowa.

Hamburger Stroganoff
         (4 servings)

4 c. uncooked wide egg noodles         1 t. salt
1 lb. TJ's ground beef                         1/8 t. garlic powder
1/2 c. chopped onion                          Dash cayenne pepper
2 T. all-purpose flour                          1/2 t. beef bouillon granules
2 t. paprika                                         1 c. (8-oz.) sour cream

Cook noodles according to package directions.  Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.  Stir in mushrooms, flour, paprika, salt, garlic powder and cayenne.  Reduce heat; cook, uncovered, for 5-7 minutes or until mushrooms are tender.  Remove from heat; stir in sour cream.  Drain noodles; top with beef mixture and green onions.

 TJ's Country Market Recipes Minimize

               Green Goddess Omelet
                              Serves 1

2 eggs, at room temperature      1 to 2 t. butter
Dash of salt                               1 to 2 T. grated sharp Cheddar or similar
1 to 2 T. finely minced fresh herbs (parsley, chives, dill, basil, marjoram, thyme, savory)
Freshly ground black pepper

Place omelet pan over medium heat for 1 minute.  While it is heating, beat the eggs in a small bowl, adding salt and herbs.  Add the butter and let it melt.  Tilt the pan in all directions to distribute the butter, then pour the egg mixture, keeping the heat to medium.  As the eggs begin to set at the edges, carefully push the cooked portion toward the center of the pan with a small spatula.  At the same time, tilt the pan, allowing any remaining raw egg to fill the spaces.  As soon as the eff stops flowing, sprinkle the grated cheese onto half the omelet.  (The egg mixture should still be moist, as it will continue cooking when removed from the pan, and you don't want it to overcook and become leathery.)  Use a spatula to fold the omelet in falf, and slide or flip it onto the waiting plate.  Serve immediately.  Find all the needed ingredients at TJ's Country Market Store in Mahtowa.
